If you're after a quick family meal then fish tacos are the answer, and this kingfish ceviche tostada recipe offers something fast and fancy.

Fish tacos are a quick and easy weeknight meal. You can simply pan fry pieces of your favourite fish, and layer them in a warm taco shell with lettuce, tomato, avocado, a squeeze of lime juice and a dollop of spicy mayonnaise.

But there's also another way of "cooking" the fish. Executive Chef Himanshu Sharda, who oversees the kitchens at Healesville Country Club & Resort, is a big fan of ceviche, a Latin American dish that typically uses citrus juices - rather than heat - to delicately cook the fish. Lemons and limes are used because of their high acidity and the smaller the fish pieces, the faster they will "cook". With this process, it's also important to use high-quality fish that's firm and fresh.

Sharda's Kingfish Ceviche Tostada recipe, which he shares here, showcases the Latin American flavours.

"This is an easy recipe for anyone to make," Himanshu says. "The dish is full of fresh flavours and sets the tone for an amazing evening."

If you're unfamiliar with the word "tostada", it means "toasted" and usually refers to a flat and crunchy tortilla. You can buy tostadas at most supermarkets. Or, if you're feeling adventurous, there are online recipes. 

Kingfish ceviche tostada recipe

Ingredients

  • 400g sashimi-grade kingfish
  • 1/2 jalapeno, finely chopped
  • 50g white onions, finely chopped
  • 2 limes, juiced 
  • 1/2 orange, juiced
  • 1tbsp olive oil 
  • 1/2 avocado diced 
  • 100g cucumber, diced and seeds removed 
  • 1 baby radish, sliced 
  • 2 sprigs coriander, roughly chopped 
  • 75ml aioli 
  • Salt to taste 
  • Pepper to taste 
  • 8 tostadas 

Method

  1. Finely slice kingfish, and mix with jalapenos, white onions, lime juice, orange juice and olive oil. Add a pinch of salt.
  2. Refrigerate for 15 minutes.
  3. Mix the avocado, cucumber, radish and coriander with the marinated kingfish.
  4. Spoon a generous portion of the kingfish mixture on top of a crispy tostada, add a swirl of aioli, season to taste, and enjoy.
