There’s nothing better than indulging in a classic dessert. This lemon tart recipe from Le Petite Gateau is perfect for your next morning tea or special occasion.

The classic French-style lemon tart has a sweet and citric flavour profile that’s won over dessert lovers for decades.

While debate continues about the true origins of the lemon tart, Le Petite Gateau chefs have perfected the classic lemon tart in Melbourne, so much so that they haven’t touched the original recipe since the patisserie opened in 2005.

In the below video, RACV Club Executive Pastry Chef Amit Sinha shares how he first creates the vanilla short crust mould, before combining lemon juice, sugar, eggs, butter and gelatine to form the inner lemon curd.

"We have actually created a recipe which is balanced in between sweetness and tanginess,” Sinha says.

Adding a final touch of France, the tart is garnished with a clear glaze and topped with a meringue, ready to be enjoyed with a sweet wine or coffee.
