TIP: When it comes to wrapping your cookies, try going for a rustic look with brown butcher’s paper red or green twine for a festive touch. Just stack the cookies on top of one another, bring the four corners of the paper together (allow more paper than you think you’ll need) and tie together with the twine.

Salted Caramel Chocolate Chip cookies

Ingredients

  • Castor sugar 144g
  • Brown sugar 144g
  • Butter 200g
  • Eggs 100g
  • Plain flour 360g
  • Baking powder 8g
  • Sea salt 12g
  • Chocolate chips 260g
  • Crushed caramel 100g

Method

  1. Ensure butter and eggs are at room temperature before beginning.
  2. Line a tray with baking paper and preheat oven to 160˚C.
  3. Using a benchtop mixer with the paddle attachment, combine castor sugar, brown sugar and butter until creamed together. Alternatively, use a hand mixer if you don’t have a benchtop mixer.
  4. Once mix is creamed, turn machine down to low and slowly add the flour, baking powder and sea salt mix. Mix until combined.
  5. Once combined, add the eggs and continue to mix on low until smooth.
  6. Finally, add the chocolate chips and crushed caramel and mix until evenly spread through the dough.
  7. Remove dough from machine and use a spoon to portion onto the baking tray. Aim for even, golf ball-sized scoops.
  8. Bake at 160˚C for approximately 16mins (times may vary depending on oven). Cookies should be chewy on the inside. Allow to cool before eating. Enjoy!
