When members with dietary issues book an RACV Club restaurant, David Martin’s MyMenu offers a full dining experience.

Being creative is the best part of my job. Not just new dishes but new concepts, such as MyMenu, for people with dietary restrictions.

I have a background in multi-site management and have worked across Australia and overseas. While working in Japan, I was the only one on Shodoshima Island who spoke English but overcame the language barrier to help them establish a Western dining concept. The culture is vastly different and the food is beautiful. I learnt a lot.

At Healesville my role is to look after all the food outlets, with the chefs reporting through to me.

The planning involved in a balanced menu takes time. People may not think about these things when they sit down for a meal.

A great part of my job is sourcing the highest-quality local produce to provide the best dining experience possible.

Food-associated disorders have increased significantly during my career and this is how the MyMenu concept came about. MyMenu provides a high-quality range of options for dietary-restricted diners.

A key frustration for people with dietary needs is that they can’t go out and have an uncomplicated dining experience. MyMenu is not complicated and it’s discreet, you get a menu like everyone else.

I would love to grow the concept, such as an interactive version for iPad and Android tablets. Diners should be able to delve deeper into the menu and the nutritional content.

I look forward to further evolving our food and what we can offer. It’s always getting better.
