Mini pancake cereal recipe that's perfect for school holidays

You might be wondering how to keep the kids entertained on school holidays. This delicious and easy-to-make mini pancake cereal recipe might just do the trick.

Are your kids aspiring Masterchefs? Or are you looking to keep them entertained on school holidays away from screens? One of the most popular recipes from the RACV Resorts kitchen is a mini pancake cereal recipe that kids will love as a sweet treat, and one they can even get involved in making.

Mini pancake cereal really is as delicious as it sounds. Basically, you make up a traditional pancake mixture, pour it into a squeezy bottle and dot mini pancakes around a hot pan. Flip the mini pancakes over when they start to bubble, give them another minute or so, and you’re done!

The kids will have a great time dressing these mini pancakes with their favourite toppings – think berries and cream, a dusting of cinnamon or maybe banana and honey.

Mini pancake cereal recipe

Ingredients

  • 1 cup self-raising flour
  • 1 tbs sugar
  • 1 egg (lightly beaten)
  • 3/4 cup milk
  • 50g butter (melted)
  • 1 tsp vanilla essence 

Method

  1. Combine all ingredients into a mixing bowl to make pancake batter. Pour the batter into a squeeze bottle.
  2. Squeeze small spots of the pancake mix onto a fry pan, leaving room between them. Using a skewer or spatula, carefully flip the pancake dots over carefully. You know it's time to flip the pancakes when tiny bubbles appear under the batter. Don't have the temperature too high or the pancakes will burn on the outside and not cook in the middle. Keep repeating this step until you have enough mini pancakes to fill a bowl. 
  3. Finish with your desired combination, such as honey, whipped cream or berries, or lightly dust with icing sugar.
