RACV Hobart Hotel's Head Chef talks about his inspiration and some of his favourite local ingredients

Head Chef Matthew Griggs does double duty at Hobart Hotel, responsible for both the signature restaurant Charcoal and the Cascade on Collins Bar. The restaurant is a reflection of the chef's creativity, but also the flavours of the Tasmanian region. Here he talks about his inspiration and some of his favourite local ingredients with us.

In Charcoal we feature as much local produce as possible, Scottsdale pork is one of our main producers we work closely with. They are located in the Cuckoo Valley and paddock-raise premium quality pork.

"We’re always on the hunt for new producers and visiting the local markets to see what’s coming into season."

We also feature wines from Tolpuddle in the Coal River Valley which are known for their premium wines, especially their Pinot Noir and Chardonnay.

Our local micro brewery of choice would be T-Bone which is a craft brewery located close by in North Hobart. The beer they’re best known for is the Choc Milk Stout which is a bit of a favourite in our Cascade on Collins bar.

Since moving back to Tasmania I’ve focused on sourcing local produce, we use Cape Grim beef and Three Rivers Lamb just to mention a couple. The Cape Grim sirloin, which is about to go on our menu, is dry aged on the bone for 30 days to enhance the flavour.

In Hobart we’re spoilt for choice in local chocolatiers and artesian products close by. We offer chocolates by Coal River Farm which is located 15 minutes away from the CBD in the Coal River Valley region. They specialize in handmade chocolates and also cheese. Their triple cream brie features on the menu at Charcoal, as well as their blue.

Cascade on Collins

RACV Hobart Hotel’s Cascade on Collins Bar is the new city hot spot for drinks, food and great atmosphere in the historical Cascade building.
