Berry Tea Jelly
Tea is a versatile ingredient and gives a simple jelly a delicate berry flavour that all the family can enjoy.

- 2 Twinings Strawberry, Raspberry and Loganberry tea bags (or 2 teaspoons of loose tea)
- 250ml hot water
- 100g caster sugar
- 18g leaf gelatine
- 400ml chilled water
- 250ml cold water
To garnish:
- Fresh berries
- Mint leaves
- Extra thick cream, Chantilly cream or Greek yoghurt
- Infuse the tea in the hot water for 3 - 5min.
- Soften gelatine in chilled water, discard water when soft.
- Add gelatine and sugar to hot tea. Stir until melted.
- Add cold water, mix well.
- Pour into moulds.
- Allow to set in the fridge for at least six hours.
- Turn jelly out of mould by quickly dipping into hot water.
- Garnish with fresh berries, cream and mint.
For something a little bit special, include the berries at Step 4 and set the jelly in a martini glass. You can also replace the sugar with a teaspoon of honey.
