French toast with fresh berries, maple syrup and crème fraiche

  • 6 slices of brioche loaf, cut thick
  • 4 eggs
  • 300ml milk
  • ¼ teaspoon cinnamon powder
  • 1 teaspoon sugar
  • Crème fraiche
  • Maple syrup
  • Strawberries
  • Blueberries
  1. Whisk the eggs, milk, cinnamon and sugar and pour into a roasting tray. Lay the brioche in the egg mix and leave for 30 minutes, turning the bread over occasionally. You need to make sure the bread is soaked through.
  2. Heat a pan over a medium heat and melt some butter. Place the bread in the pan and cook until golden brown. Once cooked turn the bread over to cook the opposite side.
  3. Once cooked remove from the heat and keep warm ready to serve.
  4. Place the bread on a plate and drizzle with maple syrup. Spoon some crème fraiche on top of the bread and scatter the berries over the brioche.
