After a tropical cocktail this summer? Try the Passionfruit Collins from Bourke Street Green.

Rob Pierce, Bourke Street Green's Bar Manager, says that a Passionfruit Collins is sweet with just a hint of tartness from the lemon juice. This refreshing take on the classic Tom Collins cocktail swaps out simple syrup for a passionfruit liqueur made with real passionfruits - although you can add a dash of syrup if you like your cocktails extra sweet.

Passionfruit Collins cocktail recipe


  • 30ml Four Pillars Rare Dry gin
  • 30ml Chinola passionfruit liqueur
  • 30ml lemon juice
  • 5-10ml simple syrup, if desired
  • Soda water
  • Ice
  • Lemon or passionfruit slice, to garnish


  • Pour the gin and passionfruit liqueur into a tall glass
  • Add the simple syrup if you want your cocktail extra sweet
  • Add the lemon juice and ice
  • Slowly stir to combine
  • Top up with soda water
  • Garnish with lemon and/or passionfruit.
